Blueberry Muffins
Ingredients:
– 2 cups all-purpose flour
– 1/2 cup granulated sugar
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 1/2 cup (1 stick) unsalted butter, melted and cooled
– 1 large egg
– 1/2 cup plain yogurt
– 1/2 cup milk
– 1 teaspoon pure vanilla extract
– 2 cups fresh or frozen blueberries
Instructions:
1. Preheat the air fryer to 350°F.
2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
3. In a separate bowl, whisk together the melted butter, egg, yogurt, milk, and vanilla extract until combined.
4. Pour the wet ingredients into the dry ingredients and mix just until combined. Do not overmix.
5. Gently fold in the blueberries.
6. Grease the air fryer basket with cooking spray.
7. Divide the batter evenly among the air fryer basket, filling each cup about 3/4 of the way full.
8. Place the basket in the air fryer and cook for 18-20 minutes, until the muffins are golden brown and a toothpick inserted into the middle comes out clean.
9. Allow the muffins to cool for 5 minutes before serving. Enjoy!
