Avocado Egg Cups
Ingredients:
-4 large avocados
-8 large eggs
-1/4 cup diced onion
-1/4 cup diced bell pepper
-1/2 teaspoon garlic powder
-Salt and pepper to taste
-1 cup shredded cheese (cheddar or Monterey Jack)
Instructions:
1. Preheat air fryer to 350°F.
2. Cut the avocados in half and remove the pit.
3. Scoop out enough of the avocado flesh so that an egg can fit in the center of each half.
4. In a medium bowl, whisk together the eggs, onion, bell pepper, garlic powder, salt, and pepper.
5. Fill each avocado half with the egg mixture.
6. Top each avocado half with the shredded cheese.
7. Place the filled avocados in the air fryer and cook for 8-10 minutes, or until the eggs are cooked through.
8. Serve immediately. Enjoy!
