Ingredients:
-4 boneless, skinless chicken breasts
-1 cup of teriyaki sauce
-1/4 cup of olive oil
-1/4 cup of sesame oil
-2 tablespoons of freshly grated ginger
-2 cloves of garlic, minced
-2 cups of cooked white rice
-2 cups of frozen vegetables (mixed, or your favorite)
-1/4 cup of soy sauce
-2 tablespoons of honey
-1/4 cup of thinly sliced green onions
-2 tablespoons of toasted sesame seeds
Instructions:
1. Preheat the air fryer to 375°F.
2. Place the chicken breasts in the air fryer basket and cook for 10 minutes.
3. Meanwhile, in a small bowl, combine the teriyaki sauce, olive oil, sesame oil, ginger, garlic, soy sauce, and honey. Whisk to combine.
4. After the chicken has cooked for 10 minutes, remove the basket from the air fryer and brush the chicken with the teriyaki sauce mixture.
5. Return the chicken to the air fryer and cook for an additional 10 minutes.
6. Remove the chicken from the air fryer and let rest for 5 minutes.
7. In a large skillet or wok, heat the remaining teriyaki sauce mixture over medium-high heat.
8. Add the cooked white rice and frozen vegetables to the pan and stir to combine.
9. Cook for 3-4 minutes, or until the vegetables are cooked through.
10. Add the chicken, green onions, and sesame seeds to the pan and stir to combine.
11. Cook for an additional 2-3 minutes, or until the chicken is heated through.
12. Serve the Teriyaki Chicken Fried Rice warm and enjoy!
