Air-Fried Veggie Spring Rolls


Crispy spring rolls filled with a medley of vegetables.

Ingredients:

-1 package of 8-10 spring roll wrappers

-1 medium onion, diced

-1 large carrot, grated

-1 red bell pepper, diced

-1 cup of shredded cabbage

-1 cup of mung bean sprouts

-2 tablespoons of sesame oil

-2 tablespoons of soy sauce

-2 cloves of garlic, minced

-Salt and pepper to taste

Instructions:

1. Preheat air fryer to 350 degrees F.

2. In a large bowl, combine diced onion, grated carrot, diced bell pepper, shredded cabbage, and mung bean sprouts.

3. Drizzle sesame oil, soy sauce, and minced garlic over the vegetables and mix until combined.

4. Take one spring roll wrapper and place it on a clean work surface.

5. Place approximately 2 tablespoons of the vegetable mixture onto the wrapper.

6. Fold the wrapper over the filling and tuck in the edges.

7. Roll the wrapper up to the top and seal the edges with water.

8. Place the spring roll in the air fryer basket and repeat with remaining wrappers and filling.

9. Air fry for 8-10 minutes, until golden brown and crispy.

10. Serve with your favorite dipping sauce. Enjoy!
