Raspberry Almond Scones


Tender scones packed with fresh raspberries and almond flavor.

Raspberry Almond Scones

Ingredients:

-2 cups all-purpose flour

-1 tablespoon baking powder

-1/2 teaspoon salt

-1/4 cup granulated sugar

-1/2 cup cold unsalted butter, cubed

-1/2 cup sliced almonds

-1/2 cup sweetened dried raspberries

-1/2 cup buttermilk

-1 large egg

-1 teaspoon almond extract

-2 tablespoons turbinado sugar (optional)

Instructions:

1. Preheat your air fryer to 350°F.

2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.

3. Cut the cold butter into the dry ingredients with a pastry cutter or two knives, until the mixture resembles coarse meal.

4. Stir in the almonds and raspberries.

5. In a separate bowl, whisk together the buttermilk, egg, and almond extract.

6. Pour the wet ingredients into the dry ingredients and stir until just combined.

7. Turn the dough out onto a lightly floured surface and knead gently until the dough comes together.

8. Pat the dough into a 7-inch circle and cut into 8 wedges.

9. Place the scones in the basket of the air fryer and sprinkle with turbinado sugar (if desired).

10. Cook for 12-14 minutes, until golden brown.

11. Remove from the air fryer and let cool before serving. Enjoy!
