Peanut Butter Cupcakes


Moist peanut butter cupcakes topped with creamy peanut butter frosting and chocolate ganache.

Ingredients:

– ¾ cup all-purpose flour
– ½ teaspoon baking powder
– ¼ teaspoon baking soda
– ¼ teaspoon salt
– ½ cup creamy peanut butter
– ½ cup granulated sugar
– ½ cup brown sugar
– 2 large eggs
– ¼ cup canola oil
– ¼ cup buttermilk
– 1 teaspoon vanilla extract
– 1 cup semi-sweet chocolate chips

Instructions:

1. Preheat air fryer to 350°F.

2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

3. In a separate large bowl, combine peanut butter, granulated sugar, and brown sugar until creamy.

4. Add eggs, one at a time, and mix until fully incorporated.

5. Pour in oil, buttermilk, and vanilla extract and mix until blended.

6. Gradually add dry ingredients to wet ingredients and mix until combined.

7. Fold in chocolate chips.

8. Grease 4 individual air fryer-safe cupcake liners with cooking spray and fill each one with the batter.

9. Place in air fryer and cook for 20 minutes or until a toothpick inserted in the center comes out clean.

10. Allow cupcakes to cool before serving. Enjoy!
