Banana Spring Rolls with Honey-Ginger Sauce
Ingredients:
For the Spring Rolls:
-4 ripe bananas
-4 sheets of spring roll wrapper
-1/4 cup of honey
-1/4 cup of chopped walnuts
-1 teaspoon of ground cinnamon
-1 teaspoon of ground nutmeg
-1/4 cup of melted butter
For the Honey-Ginger Sauce:
-1/4 cup of honey
-1 teaspoon of grated fresh ginger
-1 tablespoon of freshly squeezed lime juice
-1/4 cup of water
Instructions:
1. Preheat the air fryer to 375°F.
2. Peel and slice the bananas into 1/4 inch thick slices.
3. In a small bowl, mix together the honey, walnuts, cinnamon, and nutmeg.
4. Place a sheet of spring roll wrapper on a flat surface. Place a few slices of banana on the wrapper and top with some of the honey-nut mixture.
5. Fold the wrapper over the filling and roll up tightly. Secure the edges of the wrapper with a dab of melted butter.
6. Place the filled spring rolls in the preheated air fryer and cook for 10 minutes.
7. While the spring rolls are cooking, make the honey-ginger sauce. In a small saucepan, mix together the honey, ginger, lime juice, and water. Cook over medium heat for 5 minutes or until the sauce is thick and bubbly.
8. When the spring rolls are finished cooking, remove them from the air fryer and serve with the honey-ginger sauce. Enjoy!
