Air-Fried Eggplant Parmesan


Lighter version of classic eggplant Parmesan, air-fried to perfection.

Air-Fried Eggplant Parmesan

Ingredients:

-2 medium-sized eggplants, sliced into ¼ inch thick rounds
-1 cup all-purpose flour
-2 eggs, lightly beaten
-2 cups Italian-style breadcrumbs
-1 teaspoon garlic powder
-1 teaspoon onion powder
-1 teaspoon dried oregano
-1 teaspoon dried basil
-½ teaspoon salt
-¼ teaspoon ground black pepper
-2 cups shredded mozzarella cheese
-3 tablespoons olive oil
-2 cups marinara sauce
-¼ cup freshly grated Parmesan cheese

Instructions:

1. Preheat air fryer to 350 degrees Fahrenheit.

2. Place eggplant slices in a large bowl and season with salt.

3. In a shallow dish, combine the flour, eggs, breadcrumbs, garlic powder, onion powder, oregano, basil, salt, and pepper.

4. Dip each eggplant slice into the egg mixture and then coat with the flour mixture.

5. Place the eggplant slices in the air fryer and cook for 8-10 minutes, flipping halfway through.

6. Remove eggplant slices from the air fryer and place on a baking sheet.

7. Top with mozzarella cheese and drizzle with olive oil.

8. Bake in the oven for 5 minutes or until cheese is melted.

9. Heat the marinara sauce in a saucepan over medium-high heat.

10. To assemble the eggplant parmesan, layer eggplant slices with marinara sauce and Parmesan cheese in an oven-safe dish.

11. Bake in the oven for 5-7 minutes or until the cheese is melted and bubbly.

12. Serve warm. Enjoy!
