
Ingredients:
– 2 boneless, skinless chicken breasts, cubed
– 2 tablespoons of teriyaki sauce
– 2 tablespoons of garlic, minced
– 2 tablespoons of fresh ginger, minced
– 2 tablespoons of sesame oil
– 2 tablespoons of low-sodium soy sauce
– 2 tablespoons of honey
– 2 bell peppers, seeded and cut into strips
– 1 onion, cut into strips
– 2 carrots, cut into matchsticks
– 1 cup of mushrooms, sliced
– Salt and pepper, to taste
Instructions:
1. Preheat your air fryer to 400 degrees.
2. In a bowl, combine the teriyaki sauce, garlic, ginger, sesame oil, soy sauce, and honey. Stir to combine.
3. Place the cubed chicken into the bowl and toss it until it’s evenly coated in the marinade.
4. Put the chicken into the air fryer basket and cook for 10 minutes, stirring halfway through.
5. Remove the chicken from the air fryer and set aside.
6. Add the bell peppers, onion, carrots, and mushrooms to the air fryer.
7. Drizzle the remaining marinade over the vegetables and season with salt and pepper.
8. Cook the vegetables in the air fryer for 8 minutes, stirring halfway through.
9. Add the cooked chicken back to the air fryer and cook for an additional 2 minutes.
10. Serve the teriyaki chicken stir-fry over a bed of white or brown rice. Enjoy!
