Potato Skins

Potato Skins prepared in an Air Fryer

Ingredients:

– 4 large russet potatoes

– 2 tablespoons olive oil
– 2 tablespoons butter, melted
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 teaspoon paprika
– 1 teaspoon dried oregano
– 2 cups shredded cheese (cheddar or mozzarella)
– 1/2 cup cooked and crumbled bacon
– 1/2 cup chopped green onion
– Sour cream and salsa, for serving

Instructions:

1. Preheat the air fryer to 400°F (204°C).

2. Wash and dry the potatoes. Pierce each potato several times with a fork. Place the potatoes in the air fryer basket and cook for 20-25 minutes, or until cooked through and the skin is crispy.

3. Once the potatoes are cooked, remove them from the air fryer and let cool for 10 minutes.

4. Slice the potatoes in half lengthwise and scoop out the insides, leaving a thin layer of potato on the skin. Reserve the scooped out potato for another use.

5. Brush the potato skins with the olive oil and melted butter. Sprinkle with garlic powder, onion powder, paprika, and oregano.

6. Place the potato skins back in the air fryer and cook for an additional 6-8 minutes, or until crispy.

7. Remove the potatoes from the air fryer and top each potato skin with cheese, bacon, and green onion.

8. Return to the air fryer and cook for 3-4 minutes, or until the cheese has melted.

9. Serve with sour cream and salsa, if desired. Enjoy!
