
BBQ Chicken Nachos
Ingredients:
– 4 boneless, skinless chicken breasts
– 1/2 cup BBQ sauce
– 2 tablespoons olive oil
– 1/2 teaspoon smoked paprika
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– 1/2 teaspoon chili powder
– 1/2 teaspoon ground cumin
– 1/2 teaspoon sea salt
– 1/4 teaspoon black pepper
– 1/4 teaspoon ground coriander
– 8 ounces tortilla chips
– 1 cup shredded Mexican cheese blend
– 1/2 cup diced red onion
– 1/4 cup sliced jalapenos
– 1/4 cup chopped fresh cilantro
Instructions:
1. Preheat air fryer to 400°F.
2. Rub chicken breasts with olive oil and season with smoked paprika, garlic powder, onion powder, chili powder, cumin, sea salt, black pepper, and coriander.
3. Place chicken breasts in air fryer basket and cook for 20 minutes or until the internal temperature reaches 165°F.
4. Remove chicken from air fryer and let cool. Once cooled, shred chicken with two forks.
5. Place shredded chicken in a bowl and stir in BBQ sauce until well combined.
6. Place tortilla chips in a single layer in the air fryer basket. Top with shredded chicken, Mexican cheese blend, red onion, jalapenos, and cilantro.
7. Cook at 400°F for 5 minutes or until cheese is melted and chips are lightly browned.
8. Serve hot and enjoy!
