Teriyaki Chicken Quesadillas

Teriyaki Chicken Quesadillas prepared in an Air Fryer

Ingredients:

– 1 lb boneless, skinless chicken breasts, cut into small cubes
– 2 tbsp low sodium soy sauce
– 2 tbsp honey
– 2 tsp sesame oil
– 1/2 tsp garlic powder
– 1/4 tsp ground ginger
– 2 bell peppers (any color), diced
– 2 large flour tortillas
– 1 cup shredded cheese (cheddar, monterey jack, or a blend)
– Non-stick cooking spray

Instructions:

1. In a small bowl, mix together the soy sauce, honey, sesame oil, garlic powder, and ground ginger.

2. Add the chicken cubes and bell peppers to the bowl and stir to coat the chicken and bell peppers in the marinade.

3. Let the chicken and bell peppers marinate for at least 10 minutes.

4. Preheat your air fryer to 400°F.

5. Place each tortilla in the air fryer and cook for 1-2 minutes or until lightly browned and crispy.

6. Remove the tortillas from the air fryer and spray both sides with non-stick cooking spray.

7. Place one tortilla in the air fryer and top with the chicken and bell pepper mixture.

8. Sprinkle the cheese over the chicken and bell pepper mixture.

9. Place the second tortilla on top of the cheese and spray the top with non-stick cooking spray.

10. Cook in the air fryer for 4-5 minutes or until the cheese is melted and the tortilla is golden brown.

11. Remove from the air fryer and let cool for 2-3 minutes before slicing into wedges.

12. Serve with your favorite dipping sauces or salsa. Enjoy!
