Teriyaki Fried Rice

Teriyaki Chicken Fried Rice prepared in an Air Fryer

Ingredients:

– 4 boneless, skinless chicken breasts, cut into small cubes
– 2 cups white long-grain rice, cooked
– 1/4 cup teriyaki sauce
– 2 tablespoons olive oil
– 1/2 cup diced onion
– 1/2 cup diced bell pepper
– 1/2 cup frozen peas
– 2 cloves garlic, minced
– 2 tablespoons sesame oil
– 2 tablespoons soy sauce
– 1 teaspoon ground ginger
– 2 tablespoons chopped green onion

Instructions:

1. Preheat air fryer to 375°F.

2. In a medium bowl, toss together chicken cubes with 1 tablespoon of the olive oil and 1 tablespoon of the teriyaki sauce.

3. Place chicken cubes in air fryer basket and cook for 8 minutes, flipping halfway through.

4. Meanwhile, heat a large nonstick skillet over medium-high heat. Add remaining olive oil and onion, bell pepper, peas, and garlic. Cook for about 5 minutes, stirring occasionally.

5. Add cooked rice, sesame oil, soy sauce, remaining teriyaki sauce, and ground ginger to the skillet. Stir to combine.

6. Add cooked chicken cubes to the skillet and stir to combine. Cook for an additional 3 minutes, stirring occasionally.

7. Serve the teriyaki chicken fried rice topped with chopped green onion. Enjoy!
