Pumpkin Pancakes


Fluffy pancakes with a touch of pumpkin and warm spices.

Ingredients:

-1 cup all-purpose flour

-2 teaspoons baking powder

-1 teaspoon baking soda
-1/2 teaspoon salt
-2 teaspoons pumpkin pie spice
-1/2 cup packed dark brown sugar
-2 eggs
-1 cup pumpkin puree
-1/2 cup milk
-2 tablespoons melted butter
-1 teaspoon vanilla extract
Instructions:

1. Preheat your air fryer to 350°F.

2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, pumpkin pie spice, and brown sugar.

3. In a separate bowl, whisk together the eggs, pumpkin puree, milk, melted butter, and vanilla extract.

4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

5. Grease your air fryer basket with cooking spray.

6. Scoop ¼ cup of batter into the air fryer basket for each pancake.

7. Cook for 8 minutes, flipping each pancake after 4 minutes.

8. Serve warm with butter and maple syrup. Enjoy!
