Veggie Omelette


Fluffy omelette filled with a colorful variety of sautéed vegetables.

Veggie Omelette

Ingredients:

– 8 eggs
– 2 tbsp olive oil
– 2 bell peppers, diced
– 1 medium onion, diced
– 1/2 cup diced mushrooms
– 1/4 cup chopped fresh parsley
– 1/4 cup chopped fresh basil
– 1/2 tsp garlic powder
– 1/2 tsp dried oregano
– 1/2 tsp smoked paprika
– Salt and pepper, to taste
– 1/2 cup shredded cheese of your choice

Instructions:

1. Preheat the air fryer to 375°F.

2. In a large bowl, whisk together the eggs, olive oil, bell peppers, onion, mushrooms, parsley, basil, garlic powder, oregano, smoked paprika, salt and pepper.

3. Place the egg mixture into an air fryer safe pan. Cover the pan with aluminum foil and cook for 10 minutes.

4. Carefully remove the foil and sprinkle the cheese on top of the omelette. Cook for an additional 5 minutes, or until the cheese is melted and the omelette is cooked through.

5. Serve the omelette warm with your favorite sides. Enjoy!
