Teriyaki Chicken Salad

Teriyaki Chicken Salad prepared in an Air Fryer

Ingredients:

– 2 boneless skinless chicken breasts
– 2 tablespoons of teriyaki sauce
– 2 tablespoons of olive oil
– 1 teaspoon of garlic powder
– 2 tablespoons of honey
– 2 tablespoons of sesame oil
– Salt and pepper, to taste
– 4 cups of mixed salad greens (romaine lettuce, spinach, arugula, etc.)
– 1 cup of shredded red cabbage
– 2 carrots, shredded
– 1/3 cup roasted, unsalted cashews
– 2 tablespoons of sesame seeds
– 4 tablespoons of teriyaki dressing

Instructions:

1. Preheat the air fryer to 375°F.

2. Place the chicken breasts in the air fryer basket and cook for 12 minutes, flipping halfway through.

3. In a small bowl, mix together the teriyaki sauce, olive oil, garlic powder, honey, and sesame oil.

4. After 12 minutes, brush the chicken breasts with the teriyaki sauce mixture and cook for an additional 5 minutes.

5. Remove the chicken breasts from the air fryer and let cool before cutting into cubes.

6. In a large bowl, combine the salad greens, cabbage, carrots, cashews, and sesame seeds.

7. Add the cooled chicken cubes and toss everything together with the teriyaki dressing.

8. Serve the Teriyaki Chicken Salad and enjoy!
