Peanut Butter Banana Egg Rolls


Banana and peanut butter wrapped in egg roll wrappers and air-fried until crispy and golden.

Ingredients:

– 8 egg roll wrappers

– 4 ripe bananas

– ½ cup creamy peanut butter

– 2 tablespoons honey
– 2 tablespoons butter
– 1 tablespoon cinnamon
– Pinch of salt
– 1 teaspoon vanilla extract
– 2 tablespoons water
– Cooking oil spray

Instructions:

1. Preheat the air fryer to 375°F.

2. Peel the bananas and cut them into thin slices.

3. In a medium-sized bowl, mix together the peanut butter, honey, butter, cinnamon, salt, vanilla extract, and water.

4. Place a single egg roll wrapper on a flat surface. Place 2-3 banana slices in the center of the wrapper.

5. Top the banana slices with a spoonful of the peanut butter mixture.

6. Fold the bottom corner of the wrapper up and over the filling. Fold the left and right corners in towards the center. Roll up the egg roll and seal the top corner with a dab of water.

7. Repeat until all of the egg rolls are prepared.

8. Place the egg rolls in the air fryer basket and spray them lightly with cooking oil spray.

9. Cook the egg rolls in the air fryer for 8-10 minutes, flipping them halfway through.

10. Carefully remove the egg rolls from the air fryer and allow them to cool for a few minutes.

11. Serve the egg rolls warm and enjoy!
