Mushroom Stuffed with Crabmeat prepared in an Air Fryer

Mushroom Stuffed with Crabmeat

Ingredients:
– 8 ounces of lump crabmeat
– 1/4 cup of minced onion
– 1/4 cup of minced celery
– 1/4 cup of diced bell pepper
– 1/4 cup of diced red pepper
– 2 tablespoons of minced garlic
– 1 teaspoon of paprika
– 1/4 teaspoon of cayenne pepper
– 1/2 teaspoon of dried oregano
– 1/4 teaspoon of sea salt
– 1 tablespoon of olive oil
– 8 large portobello mushroom caps
– 1/4 cup of white wine
– 1/4 cup of panko bread crumbs
– 1/4 cup of grated Parmesan cheese
– 2 tablespoons of minced fresh parsley

Instructions:
1. Preheat the air fryer to 375°F.

2. In a medium bowl, combine the lump crabmeat, minced onion, celery, bell pepper, red pepper, garlic, paprika, cayenne pepper, oregano, and sea salt.

3. Heat the olive oil in a medium skillet over medium-high heat. When the oil is hot, add the crabmeat mixture and cook, stirring occasionally, for about 5 minutes, or until the vegetables are softened.

4. Place the portobello mushroom caps in the air fryer. Cook for 8 minutes.

5. Remove the mushrooms from the air fryer and reduce the heat to 350°F.

6. Stuff the cooked mushrooms with the crabmeat mixture. Drizzle the white wine over the top of the mushrooms.

7. In a small bowl, combine the panko bread crumbs, Parmesan cheese, and parsley. Sprinkle this mixture over the top of the stuffed mushrooms.

8. Return the mushrooms to the air fryer and cook for an additional 8 minutes, or until the mushrooms are hot and the topping is golden brown.

9. Serve the mushrooms warm. Enjoy!
