
Keto Mediterranean Chicken Skewers
Ingredients:
-4 boneless, skinless chicken breasts, cut into 1-inch cubes
-2 tablespoons olive oil
-2 cloves garlic, minced
-1 teaspoon dried oregano
-1 teaspoon dried basil
-1/2 teaspoon sea salt
-1/4 teaspoon freshly ground black pepper
-1/4 cup chopped fresh parsley
-1/4 cup chopped fresh mint
-1/4 cup pitted Kalamata olives, halved
-1/4 cup diced red onion
-1/4 cup diced red bell pepper
-1/4 cup crumbled feta cheese
Instructions:
1. Preheat an air fryer to 375°F.
2. In a large bowl, combine the chicken cubes, olive oil, garlic, oregano, basil, salt, and pepper. Mix well to combine.
3. Thread the chicken cubes onto 8 skewers.
4. Place the skewers in the air fryer basket.
5. Cook for 10 minutes, flipping the skewers halfway through.
6. Remove the skewers from the air fryer and transfer to a serving plate.
7. Top with the parsley, mint, olives, onion, bell pepper, and feta cheese. Serve.
