Keto Mediterranean Chicken Skewers

Keto Mediterranean Chicken Skewers prepared in an Air Fryer

Ingredients:

– 4 boneless chicken breasts, cut into 1 inch cubes
– 1/4 cup olive oil
– 2 garlic cloves, minced
– 2 teaspoons dried oregano
– 2 teaspoons dried basil
– 2 teaspoons dried thyme
– 2 teaspoons dried rosemary
– 1 teaspoon paprika
– 1 teaspoon sea salt
– 1/2 teaspoon black pepper
– 1/2 cup pitted Kalamata olives, chopped
– 1/4 cup capers, rinsed and drained
– 2 lemons, cut into wedges

Instructions:

1. Preheat air fryer to 400°F.

2. In a medium bowl, combine olive oil, garlic, oregano, basil, thyme, rosemary, paprika, salt and pepper.

3. Add chicken cubes to the bowl and toss to coat.

4. Place the chicken cubes in the air fryer and cook for 15 minutes, until chicken is cooked through and golden brown.

5. Once chicken is cooked, transfer to a serving dish.

6. Top chicken with olives, capers and lemon wedges.

7. Serve immediately with your favorite Keto side dishes. Enjoy!
