Keto Buffalo Chicken Bites


Ingredients:

-2 pounds boneless skinless chicken breasts, cut into 1-inch cubes

-1/2 cup almond flour

-2 large eggs

-2 teaspoons garlic powder

-2 teaspoons smoked paprika

-2 teaspoons dried oregano
-1 teaspoon onion powder
-1 teaspoon sea salt
-1/4 teaspoon black pepper
-1/2 cup buffalo sauce
-1/4 cup ghee, melted

Instructions:

1. Preheat air fryer to 375 degrees F.

2. In a shallow bowl, whisk together almond flour, garlic powder, smoked paprika, oregano, onion powder, sea salt, and black pepper.

3. In a separate shallow bowl, whisk together eggs.

4. Dip chicken pieces in egg mixture, then coat in almond flour mixture.

5. Place chicken pieces in air fryer basket, making sure to not overcrowd.

6. Cook in air fryer for 10 minutes, flipping halfway through.

7. In a small bowl, mix together buffalo sauce and melted ghee.

8. Once chicken is cooked through, brush with buffalo sauce mixture.

9. Return chicken to air fryer and cook for an additional 3-4 minutes, or until sauce is lightly browned and bubbly.

10. Serve warm with your favorite keto-friendly dip or side dish. Enjoy!
