Banana Walnut Muffins

Banana Walnut Muffins prepared in an Air Fryer

Ingredients:

-2 cups all-purpose flour

-1 teaspoon baking powder

-1/2 teaspoon baking soda

-1/2 teaspoon salt

-1/4 cup butter, melted

-1/2 cup granulated sugar

-1/2 cup packed light brown sugar

-2 large eggs

-1 teaspoon vanilla extract

-1 cup mashed ripe bananas

-1/2 cup chopped walnuts

-1/2 cup raisins (optional)

Instructions:

1. Preheat your air fryer to 350°F.

2. In a medium bowl, mix together the flour, baking powder, baking soda, and salt. Set aside.

3. In a large bowl, beat together the melted butter, granulated sugar, and brown sugar until light and fluffy.

4. Beat in the eggs and vanilla extract until fully incorporated.

5. Beat in the mashed bananas until combined.

6. Gradually add the dry ingredients and mix until just combined.

7. Fold in the walnuts and raisins, if using.

8. Grease 4 muffin tins with cooking spray.

9. Divide the batter evenly among the muffin tins.

10. Place the muffin tins in the preheated air fryer.

11. Cook for 16-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

12. Allow the muffins to cool in the tins for 10 minutes before transferring to a wire cooling rack.
