Fresh mussels cooked in a fragrant coconut curry broth, air-fried to infuse the flavors into the shells.
Ingredients:
• 2 pounds of fresh mussels, scrubbed and debearded
• 2 tablespoons of olive oil
• 1 red bell pepper, seeded and diced
• 1 onion, diced
• 2 cloves of garlic, minced
• 1 teaspoon of fresh ginger, minced
• 2 tablespoons of curry powder
• 1 teaspoon of turmeric
• 1/2 teaspoon of cumin
• 1/2 teaspoon of coriander
• 1 can of coconut milk
• Juice of 1 lime
• 1/2 cup of fresh cilantro, chopped
• Salt and pepper to taste
Instructions:
1. Preheat the air fryer to 400 degrees.
2. Place the mussels in a bowl and drizzle with the olive oil. Toss to evenly coat the mussels.
3. Place the mussels in the air fryer basket and cook for 7 minutes.
4. While the mussels are cooking, heat a large skillet over medium-high heat.
5. Add the bell pepper, onion, garlic, and ginger to the skillet and cook until softened, about 5 minutes.
6. Add the curry powder, turmeric, cumin, and coriander and cook for another minute.
7. Add the coconut milk and bring to a simmer.
8. Add the cooked mussels to the skillet and simmer for 3 minutes.
9. Add the lime juice and cilantro and season with salt and pepper to taste.
10. Serve the Coconut Curry Mussels in large bowls with crusty bread. Enjoy!
