Parmesan Crusted Scallops in the Air Fryer
Ingredients:
– 1 lb of large sea scallops
– 1/2 cup of grated parmesan cheese
– 1/2 cup of panko breadcrumbs
– 2 cloves of garlic, minced
– 2 tablespoons of olive oil
– 1 tablespoon of fresh lemon juice
– 1 teaspoon of dried oregano
– Salt and pepper to taste
Instructions:
1. Preheat the air fryer to 400°F.
2. Rinse the scallops and pat them dry with a paper towel.
3. In a shallow dish, mix together the parmesan cheese, panko breadcrumbs, garlic, olive oil, lemon juice, oregano, salt and pepper.
4. Dip each scallop in the parmesan mixture, coating it evenly on both sides.
5. Place the scallops in the air fryer basket, making sure they don’t overlap.
6. Cook for 8 minutes, or until the scallops are golden brown and cooked through.
7. Serve with your favorite sides and enjoy!
