BBQ Chicken Stuffed Potatoes

BBQ Chicken Stuffed Potatoes prepared in an Air Fryer

Ingredients:

-4 large Russet potatoes

-1 lb. boneless, skinless chicken breasts

-1/2 cup BBQ sauce

-1/2 cup shredded cheese

-1/4 cup diced red onion

-2 tablespoons olive oil

-Salt and pepper to taste

Instructions:

1. Preheat air fryer to 375 degrees F.

2. Wash and dry the potatoes, then poke several holes in each potato with a fork.

3. Place potatoes in the air fryer and cook for 20 minutes.

4. Meanwhile, prepare the chicken. Cut each chicken breast into small cubes and season with salt and pepper.

5. Heat olive oil in a large skillet over medium-high heat. Add chicken cubes and cook until they are no longer pink, about 10 minutes.

6. Once the chicken is cooked, add BBQ sauce and diced red onion and cook for an additional 5 minutes.

7. Remove the potatoes from the air fryer and cut each one in half lengthwise.

8. Scoop out the insides of each potato, reserving the potato skins.

9. In a large bowl, combine the reserved potato skins, cooked chicken and BBQ sauce mixture, and shredded cheese.

10. Mix until all of the ingredients are evenly distributed.

11. Stuff the potato halves with the chicken and cheese mixture.

12. Place the stuffed potatoes back in the air fryer and cook for an additional 10 minutes or until the cheese is melted and the potatoes are golden brown.

13. Serve warm and enjoy!
