Stuffed Vegan Mushrooms
Ingredients:
-16 medium-sized white mushrooms
-2 tablespoons of olive oil
-1/2 cup of diced onion
-1/2 cup of diced bell pepper
-1/2 cup of diced celery
-2 cloves of garlic, minced
-3/4 cup of cooked quinoa
-3/4 cup of cooked wild rice
-1/2 cup of vegan shredded cheese
-1/4 cup of vegan mayonnaise
-1/4 cup of breadcrumbs
-1 tablespoon of Italian seasoning
-1/2 teaspoon of salt
-1/4 teaspoon of freshly ground black pepper
Instructions:
1. Preheat your air fryer to 350 degrees Fahrenheit.
2. Remove the stems from the mushrooms and set aside.
3. Heat the olive oil in a medium saucepan over medium heat.
4. Add the onion, bell pepper, celery, and garlic and sauté until the vegetables are tender, about 5 minutes.
5. In a large bowl, combine the cooked quinoa, wild rice, vegan shredded cheese, vegan mayonnaise, breadcrumbs, Italian seasoning, salt, and pepper.
6. Add the sautéed vegetables to the bowl and mix until everything is combined.
7. Stuff the mushrooms with the quinoa mixture and place them in the air fryer basket.
8. Cook for 10 minutes or until the mushrooms are golden brown and the filling is hot.
9. Serve warm and enjoy!
