Potato Skins with Bacon and Cheese

Potato Skins with Bacon and Cheese prepared in an Air Fryer

Ingredients

– 4 large baking potatoes
– 2 tablespoons of olive oil
– 1 teaspoon of garlic powder
– 1 teaspoon of smoked paprika
– ½ teaspoon of black pepper
– 1 teaspoon of salt
– 4 slices of bacon cooked and crumbled
– ½ cup of shredded cheddar cheese
– 2 tablespoons of finely chopped chives

Instructions

1. Preheat air fryer to 400 degrees Fahrenheit.

2. Wash and dry the potatoes, then rub them with the olive oil and season with garlic powder, smoked paprika, black pepper, and salt.

3. Place the potatoes in the air fryer and cook for 25 minutes or until they are fork tender.

4. Remove the potatoes from the air fryer and slice them in half.

5. Using a spoon, scoop out the insides of the potatoes, leaving about ¼ inch of potato skin on each half.

6. Place the hollowed out potato skins back in the air fryer and cook for an additional 8 minutes.

7. Remove the potato skins from the air fryer and sprinkle the crumbled bacon over the top.

8. Sprinkle the shredded cheese over the top and return to the air fryer for an additional 3 minutes or until the cheese is melted and bubbly.

9. Remove the potato skins from the air fryer and sprinkle the chives over the top.

10. Serve immediately and enjoy!
