Ingredients:
– 4 boneless, skinless chicken breasts, cut into 1 inch cubes
– 2 tablespoons coconut oil
– 1 large onion, diced
– 2 cloves garlic, minced
– 1 teaspoon ground ginger
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1 teaspoon chili powder
– 1/2 teaspoon ground turmeric
– 1/4 teaspoon ground cinnamon
– 1/4 teaspoon ground cardamom
– 1 cup coconut milk
– 1/4 cup low-sugar ketchup
– 1/4 cup low-sodium soy sauce
– 2 tablespoons freshly squeezed lime juice
– 1 tablespoon fish sauce
– 2 tablespoons coconut sugar
– 1/4 cup chopped fresh cilantro, for garnish
Instructions:
1. Preheat your air fryer to 400 degrees F.
2. Place the cubed chicken in a large bowl and set aside.
3. Heat the coconut oil in a large skillet over medium heat. Add the onion and garlic and sauté for 5 minutes until softened.
4. Add the ginger, cumin, coriander, chili powder, turmeric, cinnamon, and cardamom to the skillet and cook for an additional 2 minutes.
5. Add the coconut milk, ketchup, soy sauce, lime juice, fish sauce, and coconut sugar to the skillet and stir to combine.
6. Pour the coconut curry sauce over the chicken cubes and stir to combine.
7. Place the chicken cubes in the air fryer basket and cook for 15 minutes, flipping once halfway through.
8. Remove from the air fryer and place on a serving platter. Garnish with the fresh cilantro.
9. Serve with steamed rice and enjoy.
