Ingredients:
– 2 medium eggplants, sliced into 1/2 inch thick slices
– 2 cups panko bread crumbs
– 1/2 cup grated Parmesan cheese
– 2 tablespoons Italian seasoning
– 1/2 teaspoon garlic powder
– 2 eggs, beaten
– 1/2 cup olive oil
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 2 cups marinara sauce
– 6 ounces mozzarella cheese, shredded
Instructions:
1. Preheat the air fryer to 400°F.
2. In a shallow bowl, combine the panko, Parmesan cheese, Italian seasoning, and garlic powder.
3. In a separate bowl, whisk together the eggs and olive oil.
4. Dip each eggplant slice into the egg mixture, then coat it in the panko mixture.
5. Place the eggplant slices in the air fryer basket.
6. Cook for 8-10 minutes until golden brown and crispy.
7. Meanwhile, heat the marinara sauce in a small saucepan over medium heat.
8. When the eggplant slices are done, top each one with some marinara sauce and shredded mozzarella cheese.
9. Return to the air fryer and cook for an additional 5 minutes until the cheese is melted and bubbly.
