Ingredients:
-1 1/2 lbs extra-firm tofu, cut into 1-inch cubes
-1/2 cup vegetable broth
-1/4 cup low-sodium soy sauce
-2 tablespoons sesame oil
-1 teaspoon garlic powder
-1/2 teaspoon ground ginger
-1/2 teaspoon smoked paprika
-1/2 teaspoon onion powder
-1/4 teaspoon black pepper
-1/4 cup cooked quinoa
-1/4 cup cooked brown rice
-1/4 cup diced bell peppers
-1/4 cup diced green onions
-1/4 cup diced carrots
-1/4 cup diced mushrooms
-1/4 cup diced zucchini
-1/4 cup diced red onions
-1 tablespoon sesame seeds
-1/4 cup fresh parsley, chopped
Instructions:
1. Preheat air fryer to 375°F.
2. In a medium bowl, combine the vegetable broth, soy sauce, sesame oil, garlic powder, ground ginger, smoked paprika, onion powder, and black pepper. Set aside.
3. In a separate bowl, mix the quinoa, brown rice, bell peppers, green onions, carrots, mushrooms, zucchini, red onions, sesame seeds, and parsley together.
4. Take the tofu cubes and dip them into the prepared sauce, making sure to coat each cube evenly.
5. Place the tofu cubes in the air fryer basket and cook for 10 minutes.
6. Once the tofu cubes are cooked, remove them from the air fryer and add them to the bowl of mixed vegetables.
7. Gently mix the tofu and vegetables together until the ingredients are evenly distributed.
8. Take a spoonful of the mixture and stuff each tofu cube with it.
9. Place the stuffed tofu cubes back in the air fryer basket and cook for an additional 10 minutes.
10. Serve the air-fried stuffed tofu cubes hot with a garnish of fresh parsley. Enjoy!
