Keto Mediterranean Chicken Skewers Recipe

Ingredients:

– 3 lbs. boneless, skinless chicken thighs
2 tbsp. olive oil
2 cloves garlic, minced
2 tsp. dried oregano
2 tsp. dried thyme
1 tsp. ground cumin
1 tsp. ground coriander
1 tsp. paprika
1 tsp. salt
1/2 tsp. freshly ground black pepper
1/2 cup plain Greek yogurt
1/4 cup freshly chopped parsley
1/4 cup freshly chopped basil
1/4 cup freshly chopped dill
1/4 cup freshly squeezed lemon juice

Instructions:

1. Preheat the air fryer to 400 degrees F.

2. Cut the chicken thighs into 1-inch cubes and set aside.

3. In a large bowl, combine the olive oil, garlic, oregano, thyme, cumin, coriander, paprika, salt, and pepper.

4. Add the chicken cubes to the bowl and mix until fully coated with the spice mixture.

5. Skewer the chicken cubes onto 8 metal skewers.

6. Place the skewers in the air fryer and cook for 10 minutes.

7. Flip the skewers over and cook for an additional 8-10 minutes or until the chicken is cooked through.

8. In a medium bowl, combine the Greek yogurt, parsley, basil, dill, and lemon juice.

9. Serve the cooked chicken skewers with the yogurt sauce. Enjoy!
