Mini Frittatas with Spinach and Feta Recipe

Ingredients:

– 2 tablespoons olive oil
– 1/2 cup chopped onion
– 1 garlic clove, minced
– 4 cups baby spinach
– 1/2 teaspoon dried oregano
– 1/4 teaspoon salt
– 1/4 teaspoon freshly ground black pepper
– 8 large eggs
– 1/2 cup crumbled feta cheese
– 2 tablespoons chopped fresh parsley

Instructions:

1. Preheat air fryer to 350°F.

2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 3 minutes.

3. Add the spinach, oregano, salt, and pepper and cook until the spinach is wilted, about 2 minutes.

4. In a large bowl, whisk together the eggs and feta cheese.

5. Add the spinach mixture to the eggs and stir to combine.

6. Grease the air fryer basket with cooking spray.

7. Pour the egg mixture into the air fryer basket, making sure to evenly distribute the ingredients.

8. Cook for 10 minutes, or until the frittatas are set and lightly golden.
